Ingredients

Base

  • 2 scoops HF vanilla protein
  • 3 tbsp cacao
  • 1/2 cup medjool dates
  • 4 tbsp coconut oil

Middle

  • 1 scoop HF vanilla protein
  • 1 cup medjool dates
  • 1/4 cup coconut oil
  • 3 tbsp unsalted and unsweetened crunchy peanut butter
  • cork vanilla essence

Top

  • 250 g natural cashew nuts, soaked in cold water for at least 4 hrs
  • 200 g frozen raspberries
  • 80 g coconut oil
  • 70 g honey
  • 70 g unsweetened maple flavoured syrup
  • cork vanilla essence

Method

      1. In a food processor, combine all ingredients for the base until a crumbly texture is formed.
      2. Press the base mixture into a lined slice tin and press down until even and smooth. Place in freezer to set while you make the middle layer.
      3. Combine all the ingredients for the middle layer in a food processor until smooth and a caramel like texture is formed. Smooth out this layer over the base layer and return to freezer.
      4. Mix the soaked cashew nuts together with the rest of the ingredients for the top layer in a food processor until smooth. Spread evenly on top of the other layers and return to freezer for at least 4 hours before serving. Store in freezer.
